Pretzels

These are my fave pretzels – awesome fresh and hot out of the oven!

I use a breadmaker on dough cycle.

Mix:

  • 3/4 cup HOT water
  • 3/4 cup beer (any temp, the water will warm it up) (prefer dark red beers but what else is new)
  • 1 Tbsp sugar
  • 2 tsp salt
  • 1 pkg yeast
  • OPTIONAL: 1/2 cup of sourdough starter 

Allow to proof for 5 min, you can do this right in the bottom of the breadmachine pan.

Then add,

  • 1/4 cup vegan margarine
  • 4 1/2 cups flour 

Once the dough cycle does it thing, take the dough out and make pretzel shapes or sticks or hearts or butts or whatever you want.

Preheat oven to 425 F

Get a big bowl of HOT water and dump a good amount of baking soda into it (1/4 cup to 1/2 cup in about a liter or two of water).

Dip your shaped dough into the water, shake ’em off and transfer onto a cookie sheet with parchment paper on it.

10-15 minutes, depending on thickness and your oven. Watch that shit!
